Hemp seed and vegetable salad

Ingredients:

  • 100g hemp seeds
  • 1 cucumber, sliced
  • 1 bell pepper, diced
  • 1 red onion, finely chopped
  • 1 avocado, diced
  • 50g cherry tomatoes, halved
  • 100g salad greens (e.g., spinach or arugula)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Preparation:

Lightly toast the hemp seeds in a dry pan until they are crispy. Place all the vegetables and salad greens in a large bowl. Add the toasted hemp seeds. Mix the olive oil with lemon juice, salt, and pepper, then pour the dressing over the salad and toss well.

Chocolate and hemp seed cookies

Ingredients:

  • 200g oats
  • 100g hemp seeds
  • 150g flour (whole grain flour can be used)
  • 100g brown sugar
  • 100g butter (or coconut oil)
  • 2 eggs
  • 1 teaspoon baking powder
  • 100g dark chocolate, chopped
  • 1 teaspoon vanilla extract
  • A pinch of salt

Preparation:

Preheat the oven to 180°C and prepare a baking tray with parchment paper. In a large bowl, mix oats, hemp seeds, flour, baking powder, and salt. In another bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time and mix in the vanilla extract. Gradually add the dry ingredients and mix well. Fold in the chopped chocolate. Form small dough balls and place them on the baking tray, leaving space between cookies. Bake for 12-15 minutes or until golden.

Cool and serve.

Ingredients:

  • 1 large avocado, peeled and pitted

Ingredients:

  • 1/2 cup hemp protein powder
  • 1/4 cup nut butter (almond, peanut, or other types)
  • 1/4 cup honey or agave syrup

  • 1/4 cup dried fruit (raisins, cranberries, or other of choice)

Preparation:
